肉松小餐包
用料:糖42g、盐1/2茶勺、全蛋1个、水85ml、汤种84g、高粉210g、低粉56g、奶粉20g、酵母6g、无盐黄油22g、色拉酱&肉松少许
做法:
1. 汤种:20g高粉+100ml水用小火煮成黏糊状
2.除黄油外所有材料揉成面团
3.待面团成团出筋加入黄油继续揉搓
4.调理面包拌至扩展将面团静置发酵
5.待面团发酵戳洞不回缩
6.将面团分割成小团继续发酵10分钟
7.面团收口朝下,拍扁排气,翻面朝上
8.面团上涂上蛋液,150度-20分钟即可
9.出炉再面包表面涂上色拉酱洒上肉松即可
